I made butterscotch drops for the first time this Christmas, and they were super duper simple and delicious. So when I saw a similar recipe for birds nest cookies floating around, I knew I wanted to make some this week! The recipes I saw called for chow mein noodles, but I went with my butterscotch drop recipe (using Rice Crispies rather than corn flakes as the recipe calls for). While the noodles definitely make for a more nest-like appearance, I prefer the taste and texture of the cereal.
Here's how we made ours:
1 (11oz) package of butterscotch chips
1 cup creamy peanut butter
4 cups cereal (I used Rice Crispies)
Pour cereal in a big bowl. In a separate microwavable container, heat peanut butter and butterscotch in microwave for about 2 minutes, stirring every 20 seconds or so. Then just mix the melted peanut butter mixture with the cereal, and drop by spoonfuls onto cookie sheets and chill. To make them look more nest-y, push down the center of each cookie.
They look really cute with jelly beans and/or marshmallow Peeps in the center, but I thought chocolate would be tastier so I embellished ours with m&m's (like Mama Jenn did with her chocolate nest treats).
Very big taste with very little effort-- definitely my kind of recipe! YUM!
